super simple leek and potato soup
This super simple soup takes about 20-30 minutes to throw together, and it tastes DELICIOUS.

Ingredients
two tatties
two leeks
50g butter
125ml white wine
1.2l veg stock
salt and pepper
Method
Melt 50g of butter in a large pan on a low-medium heat.
Chop the ends off the two leeks, slice them lengthways twice and then dice up into small pieces.
Make sure you give them a really good wash in a sieve under cold water before adding them to the pan.
Give your leeks the occasional stir and while they soften in the butter, peel and chop up your tatties into small pieces.
Add your tatties to the leeks and wine and turn up the heat slightly.
Allow your wine to boil down before adding 1.2l of veg stock.
Season with salt and a generous sprinkling of pepper, then pop the lid on your pan and leave the vegetables to soften.
Once soft, blend up the contents and serve up with some croutons or a hot, toasty baguette. I'd highly recommend the salt and pepper baguette from Tesco's as it is quite frankly the yummiest baguette I've ever tasted (and yes - I have been to France!)
