valentine pancakes

marlows dad is a dab hand at making pancakes, so after a couple of requests i sat him down and made him spell out the recipe for me. you can thank me later.

despite the delightful heart on top, this recipe doesnt have to be saved for the fourteenth of february, the recipe for pancake mix should fit nicely into your weekly saturday morning pancake session (thats how saturday mornings tend to be spent in our house anyway!)

ingredients

two cups flour

one cup milk

tbsp baking powder

tbsp sugar

pinch of salt

tsp vanilla extract

one egg

two tbsp melted butter

syrup

hundreds and thousands

edible cornflour petals to decorate (you can find some here)

YOU WILL ALSO NEED

heart shaped cookie cutters (widely available online)

a pastry brush (ours is from here)

flat frying pan

two medium and one small bowl

wooden spoons for mixing

spatula

whisk

ladle

method

  1. mix all your dry ingredients (except sugar) in a medium bowl.

  2. in a separate medium bowl, mix all your wet ingredients (except egg).

  3. separate the yolk from the white of your egg, and mix the yolk with your wet ingredients.

  4. in a small bowl whisk the separated egg white with your sugar until you achieve a peaky froth.

  5. gently fold the dry ingredients into the wet, but be careful not to over mix!!

  6. gently fold in the egg white and sugar, then leave it to sit for around ten minutes.

  7. heat two pans (that way you can prepare two at the same time) and brush butter onto each to coat the pan. (if you add too much it will make your pancakes soggy and too little will burn - it should just be a light brushing).

  8. the final consistency should be fairly thick (if its too runny add a little more flour first). use a ladle to dollop your mixture into the hot, buttered pan. dont set your heat too high, start with a medium heat and adjust as necessary - you dont want to burn all that hard work.

  9. wait for bubbles to appear all over the surface of your pancake and then turn with a spatula.

  10. when cooked on both sides, take them off the heat and whilst still hot add your glaze. apply a thin layer of syrup to the top of your pancake using the back of a spoon.

  11. with your heart shaped cookie cutter, place it onto the centre of your pancake and carefully fill with hundreds and thousands.

  12. decorate your plate with edible petals to finish.
