creamy sweet potato and ginger soup

it always drives me mad when ryan creates a dish and can’t remember what he did to replicate it at a later date. magnificence at its finest.

i blitzed together a simple soup the other week to feed the mamas while i hosted a play date and we all loved it (or at least they politely told me they did!)

i promised to write down the recipe… so here it is. this recipe should create enough for three hungry bellies.

YOU WILL NEED

around 4 sweet potatoes (2lbs)

2 stubs of fresh ginger

flakes of sea salt

pepper

dash of veg oil

4 cloves of fresh garlic

three generous tablespoons of creme fraiche

2 small white onions or 1 large

4 cups of veg stock

a blender

What to do

dice your onion and cook it in a little oil for a few minutes

dice your garlic cloves, peel your ginger and grate it into the pan, along with some salt and pepper. combine together

peel your tattys and cut them into small 1-2cm cubes, adding them to your pot with the veg stock

cover and bring to the boil, reducing to a simmer for around 20 minutes stirring occasionally

blend once cooked through and stir in 3 generous spoonfuls of creme fraiche whilst still hot

serve with a warm, buttery bloomer
